Fried Smashed Potatoes

Potatoes are a staple in American cuisine and can get a little boring after awhile. This recipe will dress up potatoes for a flavorful side dish. Fired smashed potatoes are an excellent addition to meals because you can deliver a higher degree of texture and season to complement any main dish. Smashed potatoes additions can include bacon, chives, parmesan cheese, and most particularly garlic. There are so many ways in which you can tailor this recipe to pair well with your headlining protein. Below is our favorite technique to season.

Ingredients

  • 12 - 16 small potatoes (1-1/2 to 2 inches in diameter; 1-1/2 to 2 pounds total)

  • 1 teaspoon salt

  • ¼ cup olive oil

  • ¾ cup freshly grated Parmesan cheese

  • 2 tablespoon Clock & Dagger Seasoning by Smoked Bros

Directions

1. Place potatoes in a large saucepan and cover with at least 1 inch of water. Add the 1 teaspoon salt to water. Bring to boiling; reduce heat. Cover and simmer for 25 to 30 minutes or until potatoes are very tender; drain potatoes.


2. Preheat oven to 450°F. Transfer potatoes to a foil-lined baking pan. After removal from pan, let cool. Using a potato masher or a rigid spatula, firmly press down on each potato to smash to about 1/2-inch thickness. You must attempt to keep each potato in one piece.

3. Using half of the olive oil, brush on potatoes. Sprinkle half of the Cloak & Dagger Seasoning on to the smashed potatoes. Bake at 450°F, uncovered, for 10 to 15 minutes or until bottoms are lightly browned and crisp. Flip the potatoes with a spatula or thongs; brush with the remaining olive oil and sprinkle with the remaining Cloak & Dagger Seasoning. Bake for 10 to 15 minutes more or until potatoes are lightly browned and crisp. Sprinkle parmesan cheese on the potatoes. Bake for 2 to 3 minutes more or until cheese is melted.



Alternatives and Additions

This technique for cooking potatoes provides a wide range of flavors and textures. Below shows a picture where we paired the potatoes with burgers and ribs. We used the traditional baked potato flavors with bacon, sour cream, onions and cheddar cheese.
