My perfect day would be spent entirely in the kitchen experimenting with new dishes, but the reality is that I have a schedule that allows for 30 mins max most days to throw together dinner. A great shrimp recipe is one of those magical dishes that comes together like a meal you slaved over for hours. With just a few simple ingredients you will have a quick healthy meal to end your day.
INGREDIENTS
1 pound wild-caught shrimp (20 count), uncooked, deveined, peeled, with tails left on
1/4 cup olive oil
zest of 2 limes
juice of 2 limes
3 garlic cloves, minced
2 tbls. Smoked Bros Chili Mix
chopped cilantro, for garnish (optional)
INSTRUCTIONS
Place shrimp in a dish in one layer.
Whisk together all the rest of the ingredients (except for the cilantro) then pour the mixture over the shrimp. Cover and place in the fridge to marinate for at least 20 mins and up to 3 hours.
Place 5 shrimp on 4 metal skewers then heat grill or grill pan to medium-high heat and grease to keep the shrimp from sticking. Alternatively, If you don't have time to fire up the grill or put the shrimp on skewers, skip those steps and just cook them on a pan on the stove at medium-high heat.
Once the grill is hot, place skewers on the grill then use a basting brush to baste the shrimp in the marinating liquid while they cook. Cook for 2 minutes per side, until pink and tender. These same instructions apply if you opted for a stovetop, just skip the basting.
Squeeze fresh lime juice on top and garnish with cilantro!

This dish pairs well with rice, grilled corn on the cob, and grilled summer squash.
