Crispy Mashed Potato Bites


Crispy Mashed Potato Bites | Fried Mash Potato Bites | Smoked Bros

Crispy Mashed Potato Bites with Gravy are the only way to eat potatoes from now on. This recipe will have you throwing away the spoon while eating these delicious mashed potatoes. The few extra steps genuinely make the world of difference in terms of texture and flavor. These bite-sized flavor grenades explode with rich gravy and creamy potatoes. The only thing that could make this classic dish better is a seasoned crispy fried shell.


Total Time: 35 minutes, not counting freezing time

Yield: 34-36 bombs


INGREDIENTS:

  • 1 cup gravy (dark gravy - whatever is your preference)

  • 4 cups cold mashed potatoes (fully seasoned and buttered)

  • 3 ounces cream cheese, softened

  • ¾ cup grated Parmesan cheese

  • ½ teaspoon Smoked Bros White Knight Seasoning

  • ¼ teaspoon ground black pepper

  • 1 cup flour

  • 2 eggs, whisked

  • 1 cup plain dried breadcrumbs (can substitute with favorite breading or stuffing crumbs)

  • 2 quarts vegetable oil for frying



Directions:


1: Special equipment: an ice cube tray and deep-fry thermometer


2: Pour gravy into an icecube tray and freeze for at least 4 hours, or overnight (a silicone tray is easiest for removal). Divide the gravy among 8 compartments of an ice cube tray. Unmold gravy cubes and cut them into 4 smaller pieces. You might need to repeat this process in other trays or the same tray until you have used 1 cup of gravy.


3: In a large bowl, mix together mashed potatoes, cream cheese, Parmesan cheese, Smoked Bros White Knight Seasoning, and pepper. Line a baking sheet with parchment. Shape the potatoes into 2 - 3 tablespoon size balls. Place them on the prepared baking sheet. Freeze until firm, about 30 minutes.


4: After the potatoes are frozen, wrap 1 mashed potato ball around 1 gravy cube. Shape the potatoes around the gravy to encase it completely and reshape into a ball. Repeat with the remaining gravy and potatoes.


Breading Technique

5: Spread the flour in a shallow bowl. Add the eggs to a second shallow bowl and beat with a pinch of pepper. Spread the bread crumbs (breading or stuffing crumbs) in a third bowl.


6: Roll each ball in the flour, then the egg, then the bread crumbs. Return to the baking sheet and refrigerate to firm up while you heat the oil, about 15 minutes.

7: You have frying options:


a: Heat 2 inches of oil in a Dutch oven to 325 degrees Fahrenheit. Fry the croquettes in 2 batches until deep golden brown, about 7 minutes per batch, letting the oil return to temperature in between batches.


b: In a deep fryer, heat oil to 375°F. Fry potato balls, a few at a time, for 3 to 4 minutes or until golden brown.


c: Preheat the air fryer to 375F. Spray the air fryer basket and the potato bites with cooking spray, then Air fry for 5 - 7 minutes or until golden.


8: Remove with a slotted spoon. Drain on paper towels. Season lightly with Smoked Bros White Knight Seasoning and serve hot.
